Marsala Sabayon

Ingredients

  • 4 egg yolks
  • ¼ cup (60 ml) Marsala wine
  • 2 tbsp sugar

Instructions

  1. In a stainless steel bowl, beat the egg yolks, Marsala and sugar. Place the bowl over a pot of simmering water, whisking constantly for 6 to 8 minutes or until the mixture is thick and creamy. Remove the bowl from the heat.
  2. Serve immediately over Grilled Pears and/or cut fresh figs. If desired, lightly char with a culinary torch.
