Family-Style Peach Melba Crème Caramel
This peach Melba crème caramel (perfect for sharing!) is just luscious. The flan is sweet, with a silky texture and a light milky taste. It’s the perfect dessert to highlight peaches at the peak of the season, and to garnish with chunks of fruit as well as raspberries.
Ingredients
- 1/2 cup (105 g) sugar
- 3 tbsp (45 ml) water
- 1 cup (250 ml) milk
- 1 cup (250 ml) 35% cream
- 1/3 cup (70 g) sugar
- 1 vanilla bean, split lengthwise and seeds scraped
- 3 eggs
- Fresh raspberries, for serving
- Ripe peach wedges, for serving
Instructions
- In a pot, bring the sugar and water to a boil. Cook without stirring until an amber caramel forms. Spread the caramel out in a 9 x 5-inch (23 x 13 cm) glass loaf pan. Let cool.
