Fondue Sauces

Ingredients

  • 1 onion, finely chopped
  • 2 tbsp (30 ml) olive oil
  • 1/4 cup (60 ml) tomato paste
  • 2 tbsp (30 ml) white wine vinegar
  • 1 tbsp sugar
  • 1/4 cup (60 ml) mayonnaise
  • 1/4 cup (60 ml) mayonnaise
  • 1/4 cup (60 ml) 10% plain yogurt
  • 1 tsp curry powder
  • 1/4 tsp ground turmeric
  • 1/2 cup (125 ml) water
  • 1/4 cup (60 ml) peanut butter
  • 1/4 cup (60 ml) hoisin sauce
  • 1 tablespoon (15 ml) chopped fresh ginger
  • 1 tablespoon (15 ml) rice vinegar
  • 1/2 teaspoon (2.5 ml) freshly ground pepper
  • 1 clove garlic, finely chopped
  • 1/4 cup (60 ml) mirin
  • 1/4 cup (60 ml) rice vinegar
  • 1 tbsp fresh coriander, finely chopped
  • 1 tsp (5 ml) sambal oelek
  • 1 green onion, thinly sliced

Instructions

  1. In a small pot over medium-high heat, soften the onion in the oil. Season with salt and pepper. Add the tomato paste, vinegar and sugar. Continue cooking for 3 minutes, stirring frequently. Let cool.
  2. Whisk in the mayonnaise. Adjust the seasoning. Refrigerate until ready to serve.
